For this wine, Ortega grapes were destemmed and lightly crushed into open vats. There they were macerated by foot, twice daily for five days, before being pressed in small batches in a basket press. Half the wine was aged in old Burgundy oak barrels, before being bottled by gravity. Wild ferment, no filtration and minimal added sulphur.

Pétillant Rosé

Our rosé is a new blend of Chardonnay Pinot Noir,Pinot Meunier, and Schönburger. These grapes were macerated and trodden, twice daily for 48 hours, before pressing One third of the blend was aged in Burgundy barrels and stirred on its lees daily for a fortnight to add body. The wine is bottled with some residual sugar, which results in a gentle pétillance. Wild ferment, light filtration and minimal added sulphur.

Qvevri Artego

For this wine, Ortega grapes were destemmed and lightly crushed into open vats. There they were macerated by Foot, twice daily for five days. The juice and skins were decanted into a Georgian qvevri, nestling in the earth under an oast house. The oak lid of the qvevri was sealed with clay and the wine left to age under flor, until being racked and bottled in the spring. Wild ferment, no filtration and no added sulphur.

Chardonnay

For this wine, Chardonnay grapes were destemmed and lightly crushed, before being trodden twice daily over 48 hours. The wine is pressed directly into the barrel, with light batonnage for six months before bottling. Wild ferment, no filtration and minimal added sulphur.

Rose pink with some natural sediment (partially disgorged), the PN17 has aromas of hedgerow fruits and rhubarb with a cream soda and autolytic nose. Crisp acidity and a persistent mousse mean the wine is very refreshing, fruit forward and easy to drink.
